Discover the menu of Siro’s, opening Thursday



SARATOGA SPRINGS — When track season favorite Siro’s opens to the public Thursday, it will once again become the most expensive restaurant in the area, with entrees averaging $60 and appetizers averaging $28.

Vogel’s hiring was announced in May, a move influenced in part by the success he had in revitalizing food at Jack’s Oyster House in Albany from fall 2020 through January of this year. His first summer at Siro begins with a track by the fire on Wednesday, when up to 1,200 people are expected to attend Siro’s Cup, a fundraiser for the Center for Disability Services held each year the day before the opening of the Saratoga racetrack. Regular à la carte meals begin Thursday.

Food and drinks in the expansive backyard will be available from 5 p.m., with the indoor bar open from 4:30 p.m. and the dining room at 5 p.m., Wednesday through Sunday. Like the thoroughbred track, that of Siro will be closed on Monday and Tuesday.

Starters include hand melon with prosciutto di Parma, beef tartare, beet and vodka gravlax, Chilean sea bass with summer truffles and asparagus, elk loin with Moroccan spices, pork tenderloin with sweetbreads and foie gras, and a truffled 10-ounce American wagyu strip steak.

Siro’s has been owned by the father-son team of Peter and Jake Spitalny for three years. A statement from Siro’s announcing the hiring of Vogel’s said of the Spitalnys: “(They) feel they have won the Daily Double with Chef Elliott and the transformation of the new dining rooms, redesign and update .”

Vogel’s status as a newcomer to Siro’s will be offset by the return of veteran general manager Kevin Decker and butler Michael Stone, who will be in his 30th year with Siro’s. Also new this year are renovated interiors and a refreshed backyard with an oyster and clam bar and a dedicated outdoor menu.
