Juliet’s new owner promises ‘very tasty and inexpensive menu’


JOLIET, IL – In less than a week, Juliet’s Tavern, which has been an empty building since early October, will come back to life as the owners of Joliet’s Hamburgerseria, CUT 158 Chophouse and Rosemary Cafe take it over.

On Wednesday night, Juliet’s new owner Bill Dimitroulas hosted a special invite-only event to give people the chance to taste the food, have a drink and soak up the ambience of 205 N. Chicago St.

“It’s about testing our bar, our kitchen and our employees to make our tune-ups for our opening Tuesday,” he said.

Come Tuesday June 8, Juliet’s Tavern reopens for real.

Juliet’s new owners plan to keep it open this summer from 11 a.m. to midnight, Tuesday through Saturday, and then expand to Sundays starting in September, which coincides with the NFL schedule.

“This is a very nice, well-made restaurant,” Dimitroulas told Joliet Patch editor-in-chief on Wednesday evening. “It’s amazing inside and out. All you need is great food and great management to bring it to a glorious stage.”

In January 2019, he opened CUT 158 Chophouse about a block away. He told Joliet Patch that CUT 158 is the best restaurant in Joliet. It currently has 4.6 stars out of 5 with 166 Google reviews. CUT 158 is best known for its rib eye steaks and tomahawk steak.

The menu, prices and atmosphere at Juliet’s Tavern will be drastically different, he said.

“It will be a very tasty and inexpensive menu,” Dimitroulas told Joliet Patch on Wednesday evening. “There will be appetizers, salads, pasta, sandwiches, some seafood and some Italian dishes. We have a variety of food products.

Because the new menu only offers a few Italian selections, “We can no longer promote ourselves as an Italian restaurant,” Dimitroulas said.

How should people dress if they are planning to visit the new Juliet’s?

“Laid back. It’s a laid back place, an environment where people come to after work,” Dimitroulas said. “They can relax, have some food and a good drink. We have a great variety of dry beers, a lot of craft beers and a lot of cocktails.”

On Wednesday night, Joliet Patch interviewed Juliet’s Tavern’s new chef, Rich Kiedro, a Plainfield resident who is 20 years old in the restaurant industry.

Patch asked if he had a favorite meal to prepare for his future clients.

“I hope everyone likes everything,” he said. “It’s like saying, ‘Who is your favorite kid? These are all my favorites.

“We’re bringing a modern twist to American cuisine,” continued Kiedro. “Something for everyone.”

He also said Juliet’s new menu will include selections that take into account the dietary needs of customers. “I want to make great food and have fun doing it,” he said. “I’m having fun and I want you to have fun. That’s why everyone goes out to eat.”

Will County Manager Jennifer Bertino-Tarrant, a Democrat from Shorewood, attended Wednesday night’s event at the new Juliet’s Tavern.

“I’m a fan of all of Bill’s restaurants,” Bertino-Tarrant said. “His staff are always very pleasant and the food is excellent. We are delighted that they are opening and we are delighted that Bill is so invested in downtown Joliet. He is committed to everything he does.”

Mike Paone, vice president of the Joliet Chamber of Commerce, also attended Wednesday night’s special event at Juliet’s.

Paone said the continued expansion of Dimitroulas restaurants in downtown Joliet should send a strong and positive message to other potential investors. For most of 2020, the former owners of Juliet’s Tavern kept the restaurant closed as they dealt with the governor’s continuing orders to shut down Illinois restaurants and indoor bars for months at a time.

In March, when Dimitroulas acquired Juliet’s Tavern, he said he planned to change the menu from Italian cuisine to American cuisine, but would keep the name of the restaurant.

“It’s good that he reopened so quickly,” Paone said. “Obviously, the family has a proven track record in restaurant management. This should be a downtown staple for a while. It is not a start-up that takes a risk. Hopefully this will lead to more investment and other places after Others should get on board and invest too. “
