Lima de Veras unveils menu as it prepares to open in Sterling

A new full-service Peruvian restaurant and bar is set to open in Sterling, and the owner has shared a first look at the new menu – one full of traditional Peruvian flavors. The new restaurant – or restobar as they have nicknamed it – is called Lima of Veras.

The Burn reported on Lima de Veras for the first time in September. The restaurant has taken over the old Irish pub O’Faolain’s in the Royal Center off Highway 7. The name Lima de Veras comes from a famous Peruvian song.

The menu offers “piqueos” or appetizers, such as Langostinos Acholados, which are prawns cooked with garlic and white wine and served with yuca. There is also Cause Maki, which can best be described as a seasoned mashed potatoes formed into a roll and stuffed with avocado, sour cream and panko-fried shrimp. The roll is then cut into slices, much like a sushi roll.

Entrances to Lima de Veras include Frijolada Chinchana, a bean stew served with baked pork belly, white rice and salsa criolla. There is also Tallarines Verdes, which is a spaghetti-like paste served with a green pesto sauce and sautéed beef.

And of course, the menu contains perhaps the most famous Peruvian dish – the Lomo Saltado, which is sautéed steak strips served with rice and fries.

The menu was designed by a team of Peruvian chefs. Two of them moved to Northern Virginia to oversee the restaurant’s food and recipes on a daily basis. The third – Israel Laura – consults on the menu. He is a television star in Peru, host of his own cooking show “Con Sabor a Perú”.

From now on, the Limas de Veras team plan to start a smooth opening on Monday, November 29th. This will be the time for them to ensure that the staff are well trained and that their systems are all functioning properly.

During this smooth opening, a limited menu will be available. A grand opening and the transition to the full menu will come a few weeks later.
