Bluefish Fine Foods opens in Madras with breakfasts, sandwiches, salads and more

Rodney Chiddix has a long history in the food industry. He has worked in catering, manufacturing and distribution. When he decided he was ready to open his own establishment, he saw an opportunity in Madras.

Along with his local family, Chiddix was looking for the right location in central Oregon. His uncle suggested Madras, and once they found a location, Bluefish Fine Foods opened up shop.

The restaurant offers fresh food for breakfast and lunch, as well as coffee, tea and a cozy atmosphere. Located in a small house behind Columbia Bank at 123 SW H St., the warm and airy atmosphere provides a nice place to enjoy a sandwich and coffee.

“Hopefully I can offer something a little different that people will be interested in,” Chiddix said. “I want to offer a simple and good cuisine for the pleasure of people.”

The menu, all hand-crafted by Chiddix, consists of breakfast favorites like pastries and a weekly quiche special, as well as sandwiches and salads for lunch.

The lunch menu consists of the classic deli dishes you’d expect, including a BLT that has six pieces of bacon, as well as sandwiches and paninis of Chiddix’s own design. Sandwiches like the Veginator and French Connection offer unique flavors, like red pepper aioli and pinot noir strawberry jam. Fresh ingredient salads are also available with special rotating items.

The restaurant’s name, Bluefish Fine Foods, stems from Chiddix’s love and appreciation for the West Coast waterways and oceans. He hopes to support local conservation and water management education efforts through the restaurant.

Chiddix draws inspiration from his many years in the food industry and strives for fresh, artisanal perfection in his foods. He says the menu continues to grow and has already added options to build your own sandwich, as well as dine-in and online ordering. Although, ironically, there’s no fish on the menu yet, he says a tuna salad sandwich might be in the works.

“I won’t put it on the menu until it’s perfect,” Chiddix said. “I want to provide the best and freshest food possible.”
