Privilege launches dynamic new summer menu served in the clouds

The newly opened Privilege at the iconic SLS Dubai has announced the launch of its dizzying summer menu. Served by the pool at 75and upstairs, the menu draws inspiration from Moroccan and French cuisines with a selection of dips, starters, salads, main courses, tagines and desserts to savor while lounging by the pool.

Diners can expect a full menu served alfresco in the sleek and stylish club. Appetizers and salads to share highlight the best local products with Seasonal Emirati vegetables served with a selection of dips; watermelon salad with figs, grilled olives, honey from the Emirates and halloumi. Upgrade to a feast of Moroccan dips from Artichokeroasted pepper and Lyonnais onion Taktouka, Zucchiniand black truffle.

On the amuse-bouche side, the signature dishes include the Charhat of lamb with lavash galette and roasted eggplant topped with yogurt and sprinkled with pomegranate seeds; pastilla filled with succulent duck breast, cinnamon, plums, apricots and almonds. For a taste of France with the flavors of Morocco, enjoy a vegetarian dish croque madame with egg, brie, cauliflower, eggplant, potato, zucchini, molasses and pomegranate.

For the main event, guests can enjoy a variety of Tagines including an Charmoula Grilled Shrimps seasoned with mint, chillies and roasted Moroccan spices. For a taste of Rabat, dine on a Wagyu beef tagine with apricot, prunes and cinnamon; Seafoodwith potatoes and carrots, Mushroom with chickpeas and tomatoes, and Chick with candied lemon, salted French butter and olive.

The piece de resistance of the new Privilege menu includes desserts including Pink & Raspberry Cabbage, one light rose mousse and refreshing raspberry coulis; a Pistachio Baklava served with a creamy mastic ice cream, or a ParisiennePaired chocolate fondant with a fresh orange and saffron sorbet.

Privilege welcomes everyone to enjoy a beautiful Dubai sunset all summer long alongside this spectacular new menu served on the 75th floor.
